🍫 Quick Chocolate Sauce
· 1/2 cup cacao powder
· 2 teaspoons vanilla extract
· 1/3 cup maple syrup
· 1/3 cup plant milk store bought or homemade, I like soy, almond, or oat milk as they tend to be a bit thicker
In a small saucepan combine all ingredients with a heat safe whisk over a low heat for 2 to 3 minute until combine and creamy.
Serve warm or cold. Store leftovers in a glass jar with lid for up to 1 week. Works great as a dip with fresh fruit, poured over banana nice cream, or by a spoonful with peanut butter for the ultimate quick sweet treat.
🍝 Cauliflower Fettuccini Alfredo
· 8 ounces fettuccini
· 1 large zucchini, spiralized or peeled into strips with a vegetable peeler
· 1/2 large yellow onion, diced
· 3 cloves garlic, minced
· Small head of cauliflower, about 4 cups
· 1 cup vegetable broth
· 2 tablespoons nutritional yeast
· 2 teaspoons lemon juice
· 1/2 teaspoon soy sauce OR coconut amino
· 1 tablespoon white miso paste
· 1/3 cup hemp seeds
· Salt and black pepper to taste
For Serving:
· Fresh arugula
· Fresh parsley
· Red crushed chili flakes
1 Prep your veggies. Get the pasta cooking according to package directions. The sauce will come together while the pasta cooks. In a large skillet heat a 1/4 cup of water, then add the onion and garlic and cook for 3 minutes. Add the cauliflower and vegetable broth. Cover and let the cauliflower steam for 5 minutes.
2 Carefully transfer all of the ingredients from the skillet to high speed blender along with the nutritional yeast, lemon juice, soy sauce, miso, and hemp seeds. Blend on high for 1 to 2 minutes until smooth. Salt and pepper to taste. Transfer cooked pasta, spiralized zucchini back to the skillet used before then pour sauce over and combine.

I have been on a vegan diet no oil three months I have gone from 40 size to 34. Feel great!
I eat raw veggies and fruit. Beans and lentils. Make tortillas from buckwheat, mug beans . I had too cuss I discovered from scans I was full of plaque. On this diet I be plaque free in year
This is an inflammatory meal already.. the moment she put that canned beans already disqualified this dish. There's soy in almost everything that's canned. Soy can cause inflammation.

I did a half juice day but tomorrow I want to commit for a whole 20 hour cleanse ❤ I've tried it once but I didn't like how I felt but now I am most educated so now sometime I'll add one juice just to taste it. i want to up it to 3 days
Brilliant video definitely hit home for me we definitely have had the same food patterns. Comfort eating not dealing with the root cause. I am now 61 maybe about 1 stone to loose after menopause. Just starting my plant based journey great advice on your channel Michele. I just don't feel good eating meat anymore. Love walking my favourite exercise need to step it up now. I totally get that. One thing that helps is replacing something else during that timeframe. Go for a walk, take a bath, read a book. Anything away from the kitchen ☺️

@veganmichele I made the sweet potato lentil soup last night and it was soooo good. from what I watched so far I noticed you don't use avocado is there a reason for that? I'm going to try that celeantro salad dressing next. appreciate your info and effort! regained 50lbs wish me luck!
@nellamorra6728 I’m so glad you enjoyed it. I do indeed eat avocado, but within reason so I don’t have too much fat in my day. But I love avocado and have it in a lot of recipes here💚
